China’s Hot Pot Base Market Eyes RMB 50 Billion by 2025: Stirring Woks and Vacuum Packaging Raise Quality Standards

A common saying online goes: “Nothing a hot pot cannot fix; if there is, two hot pots will do.” It reflects just how popular hot pot is. As a traditional Chinese dish, hot pot has grown into a high-profile segment of the catering sector in recent years, with a market value approaching RMB 1 trillion. Its rapid expansion has also opened opportunities for upstream categories such as hot pot base.

Hot pot base is the seasoning used to build the hot pot broth and is often called the soul of the meal. As a subcategory of compound seasonings, it has expanded quickly on the back of hot pot dining. According to data, China’s hot pot base market reached RMB 33.2 billion in 2021, up 27.35% year on year, and is expected to reach RMB 50 billion by 2025.

As consumption upgrades, hot pot brands and chain restaurants are setting higher requirements for standardized, process-driven bases. At the same time, the pandemic over the past two years has led to more at-home cooking, pushing up consumer demand for hot pot base. Production is therefore shifting toward automation and larger-scale operations.

In the early days, hot pot base was mainly stir-fried by hand. The process required constant stirring to prevent the pot from burning, while seasoning and heat were controlled manually. That approach was inefficient, time- and labor-intensive, and could not ensure consistent finished-product quality. As the hot pot restaurant market kept growing, manual stir-frying could no longer meet demand. To raise capacity and improve quality, processors began adopting automated equipment such as stirring woks and vacuum packaging machines.

Stirring woks are power-driven and are known for fast heating, even heat distribution and resistance to burning. Their stirrers can be adjusted to different speeds, helping ingredients mix evenly and safeguarding finished-product quality. Some models also offer a tilting discharge function, which greatly reduces manpower and labor intensity while improving hot pot base production efficiency.

Vacuum packaging machines are another common piece of equipment in hot pot base production. Vacuum-packed hot pot base is more hygienic and easier to ship over long distances, effectively widening a product’s sales reach. These machines also support high-efficiency output, packing dozens of bags per minute. After packaging, products can enjoy a longer shelf life, a more premium positioning and stronger consumer appeal.

With demand rising from both B2B and B2C channels, the hot pot base market still has considerable room to grow. In a highly competitive landscape, manufacturers need to go deeper into product development, maintain strict quality control and innovate around market needs—launching bases with more flavors and richer nutrition—to win consumers over.
